Sour Asylum #3: Oud Tannenbaum is the third in our ongoing series of lacto-fermented sour ales. Lactobacillus is added to the brew kettle lending a mild acidity to this brown ale. And in the spirit of this season when tinsel is hung and carols are sung around the Christmas tree, this tart brown ale is matured on cedar, enhancing the dark malts and imparting a dry cedar character to the finish.

Aroma: 9 | Appearance: 8 | Mouthfeel: 9 | Flavor: 8 | Overall: 9
Pours translucent mahogany with a thick and fine-bubbled tan head. Aroma features malty, sour apple, dark fruit and fresh-cut wood tones. Flavor starts with sour fruit and adds roast malt, dark fruit and cedar tones as the beer flows over the palate. Firm body has good fizz and a sour fruity finish. Firm mouthfeel has fizz to spare. Find asylum in a glass.
