For our third beer in the ‘12 Days of Christmas’ series we decided to take a little creative liberty when approaching the barrel aged version. We were able to acquire an abundance of syrah grapes from the Santa Ynez Valley, which are full of rich, dark berry flavors and a wisp of black pepper which seemed almost too perfect for Three French Hens. The grapes were pressed and the juice was added to the beer which was then aged in wine barrels for one year. The result is a satisfyingly tart, dark ale with hints of oak and dried fruit that finishes with a clean, vinous character typical of a deep red wine.

    Sampled on 4/28/2012. This sour/wild ale pours a dark reddish brown color from a 750ml bottle. Medium sized off white foamy head with good retention and nice lacing. The aroma is fruity. sweet, grapes, tart and woody. A medium bodied sour/wild ale. The malts are fruity, grapey and sweet. The hops are earthy. Decent carbonation. Tart and funky, woody and grapey. A lot of petite syrah character. Tart, woody and funky. Very nice beer. Very reminiscent of Cantillon or Rodenbach. Very complex sour ale. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is tart, funky and sweet.

    a surprise appearance since i didnt even know this existed. i like the 3FH, but this took that beer to a whole nother level. big juicy syrah fruit and leather flavors atop an already pretty nice dark belgian strong. vinous and a little tart (though I would not class is as a sour as RB did)...just a barreled BSA. Good stuff. If I'd had this solo I may have even scored it higher.
