Three French Hens is the third in the 12 Days/Years of Christmas Series. We again drew some inspiration from the name and decided that at least a portion of this beer had to be aged in French oak barrels. What we came out with is a bold and spicy Belgian Dark Strong Ale, 25% aged in oak. This beer is designed to take the journey through time until 12 Drummers Drumming, but is a delightful holiday treat right off the shelf. ABV: 10%, IBU: 22.5, SRM: 30, Release: Winter 2010/2011

Pours a muddled brown, with a light shampoo of head .. . aroma of a trampled pie in church .. . light spice, cocoa, and light wood with sugar .. . this sounded like a good blend but in the end- a mess .. . Swim with the fishes you zombie bastard!!

Another I hate to open right now. Rich sweet dark fruit and spice. Very rich brew. Best over the holidays. I really enjoy this and wish that I could have aged it for a few years. Shows alot of promise.

Nice. Pours dark brown, no head. Mouthfeel has an interesting twang to it. Flavor has discernible notes of the oaky thing but also a bit of sharpness. Still rather nice.

started out ho-hum, but opened up quite nicely. dark brown. smooth big body from the partial oak aging. no rough edges once this beer warms up. aroma and flavor are spicy yeast (maybe actual spices?) a hint of cocoa, and a sweet malt presence, with barely discernable hopping. definitely better warmer. fell short of 2 turtle doves only because that one was awesome. 2 years old it's kickin ass
