After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we'd have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year's Barleywine, we've decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that's the story I'm stickin' to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it's aging. I'd give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Pours a dark brown colour with a big creamy-bubbly light-mocha coloured head, everlasting, leaving creamy lacing. Big dark fruit aromas with plums and spices, covering the roasted malts. And eventually, hints of vanilla softening things. This keeps on changing and some grass shows in the nose. The taste definitely is where the hops appears stronger. Even at the start, fading to show some coffee in the finish. Kind of a sharp, bitter entree. A pretty hoppy tasting Imperial Stout that goes down nicely... if this is your thing. The head is stunning for a bottled brew.

I don't like to give bad reviews because everyone has different tastes and likes. I drank only about 4-5 ounces of this and then poured the rest of the bottle out. Terrible balance of hops and very bitter.

Pours a thick frothy brownish head and has a dark brown appearance, almost pitch black. Lacing is not too bad. Aromas of roasted malts, coffee, vanilla. Flavours are mainly barley malts, coffee, roasted malt, notes of toffee, molasses and nuts with subtle hints of raisins and vanilla in the finish. Some spices are apparent after a while as well as earthy hops. Alcohol is fairly noticeable but not offensive at all. Slick, oily and smooth mouthfeel. Fairly bitter. Goes down nicely for 10%abv.

The beer pours a solid black colour with a thick creamy light brown head that lasts. The aroma is roasted malt, coffee, dark chocolate, and hops. Hoppiest Impy Stout I've had in a while. The mouthfeel is full bodied with average carbonation. The flavour is roasted malt, chocolate, coffee, and vanilla. An excellent beer! -

A very dark blackness in color with a big tan head rising above. There was good hang time on the head. It settles into a moderate ringlet. The profile intense in both nose and in tasting is roasted malt, chocolate and coffee. Some lighter vanilla? Full bodied and slick.

2011 version. Can see why it’s called BIG BEER. Aroma begs you to drink. Bold flavour of roasted malt, dark chocolate, milk chocolate, vanilla, coffee, dark fruit, alcohol warmth, excellent flavour. Thick full body, creamy and smooth . Shame about the appearance. No head or lace. Wish you could buy this in ice cream form.

Classic Imperial Stout, well made all around. Slow dark pour with a filmy brown head and spotty lacing. Upfront roast and loads of creamy chocolate and coffee. Balancing bitterness, but not hop aroma or flavor to speak of. Silky smooth, rich full body. Undeniably grand and very old school...wonderful.

pretty stinkin hoppy, even at 2+ years old. roast, chocolate, spicy hops. great aroma at first got a little hot at room temp. prickly but full feel atop a black body. 99th percentile? no way. but a good impy stout that has some age on it. will rerate fresh if i get a chance.

I was sampling a few different beers during a fantasy football draft, so I could be off by a few points here or there...as my recall isn't 100%. For the price, I may get this again to get a 2nd opinion. It wasn't super mud thick, nor midnight black in appearance...but pretty heavy overall and had a dark brown appearance/frothy coffee colored head. Not quite a perfect balance in the flavor, slightly burnt and roasty aftertaste. Good beer though....will drink slower next time and maybe not share so I have the entire 22 oz. to get a better review.

Black- medium foam .. . roast, coffee with splenda, maduro cigar paper in the mouth .. very smooth, but seems to get lost in middle stout land .. . happy to have tried it! .. . Xylophone is spelled with an X, that's wrong, xylophone's zzzz, X? I don't fuckin' see it. It should be a Z up front, next time you have to spell xylophone, use a Z. When someone says, "Hey that's wrong," say, "No it ain't. If you think that's wrong, you need to get your head Z-rayed." It's like X wasn't given enough to do, so they had to promise it more. Okay, you don't start a lot of words, but we'll give you a co-starring role in tic-tac-toe. And you will be acquainted with hugs and kisses. And you will mark the spot. And you will make writing Christmas easier. And incidentally, you will start xylophone. Are you happy, you fuckin' X?!
