August’s Bock was made collaboratively with the German-based brewery Gold Ochsen and was named after both breweries past presidents from five generations ago. Both breweries are still family-owned and have almost 570 years of combined brewing experience. The older Gold Ochsen Brewery was founded in Ulm, Germany, in 1597, and the younger August Schell Brewery was founded in its Sister City, New Ulm, in 1860. Brewmasters from both breweries worked together to choose the style and recipe for this beer. They decided to create a blonde doppelbock using Tettnang, Saphire and Smaragd hops from the Tettnang region of Germany located near the Gold Ochsen Brewery. For a subtle twist, each brewery selected a different new variety for dry hopping. Gold Ochsen dry hopped their version with Mandarina Bavaria hops and the Schell’s Brewery used a German variety, Polaris. Each brewery used its own local base malt, but used the same specialty malts; Pilsner, Munich, Abbey and Carapils from Weyermann Malting in Germany. August’s Bock was brewed in the blond doppelbock style (literally “double bock”). It is deep golden amber in color and extremely rich in flavor. It has an assertive hop bitterness and a robust malt backbone. Polaris dry hops add a unique hoppy character and aroma. It is a very full-bodied beer whose strength is masked by its easy drinkability.

Pours a crystal clear caramel color with a sub one finger head that takes it time. Big bubble carbonation. Aroma is like that of a strong lager, malty and a tad sour to the nose. Taste reminds me almost of a breaded meat of all things. Reminds me of pumpernickel bread with the spice. Booze is well hidden but noticeable. Highly drinkable.
