Texas Tilt is a live lacto gose that we mashed in with 42 pounds of sectioned Texas-grown Rio Star ruby red grapefruit in order to provide the correct pH environment for saccharification. The primary benefit of this esoteric technique is that we are left with residual grapefruit/citrus flavors in the finished beer, and secondarily we aren't using food grade acids, which tend to be on the harsh side. We use this same technique with our Meyer lemon gose, Meier. Just make sure you don't drink this beer if you are on Lipitor as there are adverse consequences when you combine a statin with grapefruit consumption. Be safe out there!
