Our Cabot Wheat is true to the traditional German style Hefe-Weizen beers. First let me explain what the words mean: "HEFE" means with yeast, and "WEIZEN" means wheat beer. Therefore, we have wheat beer with yeast. In brewing our Hefe-Weizen, we at Paper City Brewery have set out once again to stick with traditions. As in the authentic German wheat beers, we incorporate 50% German wheat and a traditional German yeast strain. This combination is responsible for the fruity banana-like aroma and a subtle natural citrus taste. Our Hefe-Weizen is a light and fresh summer brew with a thirst quenching feel for those hot summer days.

KSBF07 Poured a golden/yellow with good head. ARoma was lots of bananas and cloves. Flavor was much the same was thin and watery though not as carbonated as it should have been.

KSBF07 as a Paper City "Hefeweizen." Typical appearance for a hefe, although the head was a bit weak. The aroma was cloves and bananas, other fruity esters. The flavor was likewise a mix of bananas and cloves, but definitely watery and a bit disappointing. The mouthfeel was too light, and combined with the watery flavor, made this very subpar for the style, although not offensive (ie. drinkable).

LABEL READS: CABOT STREET WHEAT (not Summer Wheat--after all, it's early March) This is my first American Hefe other than Harpoon's UFO and something far more forgettable. Although I'm normally a big fan of Paper City's offerings, this one was disappointing. Two words: Banana beer. OK, it says on the label that this is a "truthfully delightful unfiltered brew, with a fruity banana or candylike aroma as well as a phenolic undertone found in many traditional German wheat beers." I guess I should have read that before I bought it. The aroma is of ripe bananas, the flavor is of ripe bananas mixed with wheat beer, and the aftertaste, well, you get the point. The banana notes are overwhelming. The appearance is excellent, caramel brown, almost opaque with a short but creamy head. Alas, the mouthfeel disappoints compared to other Hefeweizens. I can hardly tell that this is unfiltered. I'm certain it is, but I'm afraid the banana sweetness makes it hard to detect those delicious particles of beery goodness. I don't know if it's good or bad that the flavor is consistent with the aroma. Normally, I like consistency of aroma and flavor, but with this beer, I wouldn't have minded a flavor surprise. I rate this beer a little below average, but I'm a hard grader.
