A sour beer with sea salt, cucumber and lime juice; sounds insane, right? Nope, this thirst-quenching Gose (pronounced Gose-Uh) is a perfect balance between tart, refreshing and citric, like a well-crafted cocktail. Named for the Roman goddess of agriculture and crops, Ceres is our tribute to the importance of fresh, natural ingredients. Wheat and barley, cucumbers and limes, Himalayan sea salt and a hit of Lactobaccilus combine for the perfect summer brew. The gods were smiling on our brewers the day they came up with this beauty.

    Pours a clean light yellow colour at first, but gets hazy by the end. Fizzy white cap with a little more stay than expected. Not completely filtered with very tiny particles through it. Some bubbles on top. Fresh cucumber juices with the peel for aromas. The taste is where the sourness appears, but not too crazy - tamed by the cucumber juice. The salt is quite mild in there with the lime flavours. Mostly felt in the aftertaste. Smell balance out in the end with everything else. I must say this is very well-done for lots of different ingredients. Very refreshing.

    375ml bottle from LCBO. Pours a fairly big foamy bubbly white head but goes away almost immediately. Has a hazy golden appearance, more akin to pickle juice (or cucumber :p ). No lacing leftover. Aromas of lime are quite apparent as well as the cucumber, actually fairly noticeable. Flavours are not suprisingly the cucumber at the forefront and very strong, also honey dew and the lime shows up in the finish. This gives the finish a slight sour and tarty mouthfeel. Medium body. Average retention. It's actually pretty decent and goes down somewhat smoothly but not something I would have again immediately afterwards. Kind of a one and done beer. Still, overall enjoyable and probably better to share.
