For centuries monks throughout Europe have been recognized for crafting some of the world’s finest ale. The Benedictine monks of New Mexico bring these same venerable traditions to Monks’ Ale — a healthy, full-bodied ale that endears you to its heavenly taste. Monks’ Ale is a Belgian-style Abbey ale, a single, the type of beer the monks would drink on a daily basis. It is 5.1% alcohol by volume, 18 IBU, and has a starting gravity of 1052 or 13° Plato. It is made with a blend of three malts from the U.S., Canada and Belgium. We use only the finest European hops, including German Hallertau Hallertauer, Czech Saaz, and Styrian Goldings from Slovenia. Our yeast was originally from the brewery of the Belgian Trappist Abbaye de Notre-Dame d’Orval. Monks’ Ale is distinctly fruity and spicy. The yeast lends a note of clove and in combination with the malt, hints of plum and apricot. The malt itself provides a honeyish quality up front, a round fullness in the middle, and the hops, together with our pure brewing water, lend a clean, dry finish. This ale makes an excellent aperitif or first course accompaniment, and pairs well with seafood, lamb, and poultry. It is a wonderful companion to cheese and fruit. Let you palate be your guide!

12oz bottle from a Safeway in Scottsdale, AZ, at a forgotten price. Dark gold pour, modest white head, with some lacing. Malty flavour, with a hint of hop. Nothing there in the way of spices or yeast, though. Average mouth. Flavour not repulsive, just mehhh.

Aroma - light peppery spices, orange peels, toasted bread and light caramel
Appearance - hazy reddish amber, weird uneven off-white head, kinda lumpy looking really, average retention and no lacing.
Mouthfeel - light bodied, medium carbonation, kinda prickly
Flavor - cloves, peppery, doughy, light sweetness with a spicy finish.
Overall - nice spice level in the aroma and flavors, easy to drink and balanced nicely. -

Aromas of fruits, plums and especially apples, sweet malts, caramel, bread and bit of spice. Flavor is much the same with the malts taking on a bigger role, some alcohol and clove in the end. The body is a slightly hazy golden yellow/ orange hue, a thin soapy head. Overall a nice beer.
