La Brut IPL est une bière d'abord fermentée en cuve de stainless à basse température, puis refermentée en barrique de chêne français avec levure Brettanomyce Claussenii. Avant l'embouteillage, elle est assemblée avec une saison sure barriquée et dry-hoppée au houblon Nelson Sauvin. Il en résulte une bière extra-sèche, aux arômes de raisin blanc, de melon et de poivre rose.

Fairly filtered, very light-golden, bright-yellow colour with a white head, average retention and leaving some soapy lacing spots. Brett-funk aromas, earthiness with some lemon-sourness and hints of woody-oak, vanilla notes. Gets a bit more hazy as it pours. A decent, fresh herbal nose does come out with time. The flavours are blended, mildly with the lemon zest, light tartiness, slight funkiness and oak. A refreshing lager with good herbal hoppiness, citrus and woodiness.
