noun: tes·se·la·tion [ tes-uh-ley-shuhn ] An arrangement of mosaic hops closely fitted together, in a repeated pattern without gaps or overlapping. “Learn the rules like a pro, so you can break them like an Artist.” Brewing is steeped in tradition. Adherence to style is what has defined brewing for much of its history. With that said, there is nothing static or constant about the cravings of beer drinkers. Over time, IPAs have varied from largely bitter and malt-forward, to unfiltered and gentle medium-bodied beers showcasing the delicious aromatics of hop varieties. One varietal that we have found to be particularly compelling is Mosaic. Mosaic presents enough alpha acids for bitterness but maintains pronounced notes of tropical fruit, berry, and even some light spiciness. In marriage with the Maine malt we use, we created a platform for Mosaic to display balance and expression. Tessellation Double IPA is brewed with 100% Mosaic hops, hand-selected by our team in a large annual trial of ingredients. Our Mosaic lots are selected to make this beer shine, allowing Tess to present a refreshing and biscuity experience, while finishing with a heavy-handed dose of mosaic juiciness.
