Red Dawn is a result of what happens when you throw out the rule book and just start playing with ideas. We love the caramel maltiness of red ales and of course, IPA level, hops are always a welcome ingredient, but we wanted to "uncover" new flavor characteristics that would break the mold of the IPA style. That’s what the Undercover IPA is all about anyway so, in a mashup of brewing styles, we decided to brew a hopped up red wheat. The plan was a bit risky and it had potential for a massive fail, but it also had potential to be new, interesting, and quite delicious. Our wheat yeast produces a nice bananna note so we decided to compliment that with some juicy fruity hops all laid on a foundation of caramel sweetness that is characteristic of a red ale. To be honest, I was unsure at first. The flavors needed some time to develop as we approached the end of fermentation and dry­hopping. Once each element started to mellow and intermingle, the beer began to blend nicely. What we ended up with was a beer with a beautiful red hue, a non­traditional aroma of melon, bananna, and evergreen, a great medium body mouthfeel and a significant lingering bitterness. The evolution continues and this version of 4Deep Undercover IPA has revealed that there can be more to an IPA than a pale orange color and big citrusy hops. Grain: ­Pale, Munich, Caramel 45 and 120, Red Wheat and Black Prinz for color Hops:­ Pacific Gem and Centennial. Dry hopped with Galena Yeast:­ American Wheat

    Pours a nice clear, somewhat dark amber with a respectable fluffy pale tan head. Strongly hoppy aroma is more woody than resiny, with malty and fruity underpinnings. Strongly malty flavor has hay, fruity, malty and subtle caramel notes - scarcely bitter, a touch sweet. Texture has average viscosity but good fizz, leaving a hoppy and caramel finish. So what if the movie stank - this is a danged good beer!
