Sometimes we start with what hops are available. After securing a new hop we have not previously brewed with, we wanted to see what it was about. Boadicea is UK grown hop with mellow citrus, light flowery and faint lime-like aromas. Based on this description, we went easy on the grain and the bittering. The result is a very sessionable IPA that displays a wide range of tropical fruit character. Hence the name "Cocktail". So the lighter grain bill created a foundation for us to build on. We modified the bittering hop to be more subtle and to build on the palate as you drink instead of smack you in the face right out of the gate. The Boadicea was used in the hop back since it was whole leaf. You may notice there were no other hop additions until dry hop. Liberty and Sorachi in the dry hop to bring out the citrus and fruity character. Very pale yellow color with a slight haziness from the excessive dry hop. Very light and drinkable IPA that features a bouquet of tropical hop aroma. Finishes with a hint of malt backbone from the Munich malt. Grain - 2-Row, Munich Hops - Warrior, Boadicea, Liberty and Sorachi Ace Yeast - American Ale

Growler. Strong, hoppy aroma has a firm yeasty and slightly fruity-sour overtone. Pours a hazy solar yellow with a fairly thick and rather persistent eggshell head that leaves some good lacing. Flavor is hoppy, resiny, woody - and subtly distinctive, with hints of fruit, butterscotch and yeast. Smooth, firm texture has good fizz and leaves a hoppy, resiny finish. Nice job, JailHouse.
