Created by the brewery's founder, Quilter's Irish Death is an Imperial Sweet Stout with a big malt body and balanced bitterness. Over half a dozen malts combine to make this one dark, smooth, and hi-octane ale... the name is a necessary reminder that despite the surprising approachability, this beer weighs in at a hefty 7.8% ABV.

Pours translucent mahogany with a thin parchment head. Aroma features caramel, toasty malt, sweetness. Flavor provides caramel, toasted malt and woody hops. Texture yields fair body & peppy fizz. Maybe not deadly, but satisfying.

From Pt Roberts (WA) Texaco, in a bomber. Ultra dark, imprenetrable by light pour under a miniscule yet still ring-producing head. Subdued aroma, some malt. Flavour very different from what I'd expected, malt and caramel sweetness, yet at a well-balanced level. Very tasty and moreish. Sweet yet not too sweet finish. Not at all like any Imperial Stout I've had. High ABV is well concealed in both aroma and flavor. Fabulous mouthfeel, buttery smooth.

Medium brown clear pour, big bubbly off-white head, good lacing. Nice malty aroma, sweet, inviting, nearly like a Scottish ale without the peat, slight apple and fruits, very low hops. Not really a stout, more like an Imperial Brown. Taste is even better than the aroma with a big malt and caramel sweetness but now overly sweet, hint of fruitiness, nice underlying hops to offset. Surprisingly good big beer that hides the alcohol very well.

This beer does a great job of balancing sweetness with a smooth malty flavor with absolutely no bitterness! It is called Irish death because of the high alcohol content(7.8%) so be careful. I have many friends who don't care for darker beers but love this one because it is so smooth.
