An organic version of last summer's release, this style is an invigorating wheat beer with 100% organic grains, a hint of rye, and the tang and hue of organic hibiscus. We recently received our organic certification from Clemson University after undergoing a rigid inspection and two-month compliance process. Although this represents a big step for Highland, the idea of an all organic product is consistent with our corporate ethos and embrace of natural traditional brewing methods. Organic Cattail Peak Wheat Beer is the latest in our line of seasonals named after mountain peaks in Transylvania County in Western North Carolina.

Comes out of the bottle a clear solar yellow with a thick, fluffy white head that does not stick around too long. Strong aroma is wheaty, yeasty and rather fruity, the latter being mainly sweet citrus - orange with more than a hint of lemon. Flavor is typical of a decent wheat beer, being wheaty with an undertone of yeast and a citrus hint. Texture has average body and a fair amount of fizz. Nothing special, but still refreshing. Brings a ray of sunshine into a chilly winter day.

Pours a light, slightly cloudy yellow with not much head and some lacing. Good carbonation. Citrus - lemon, slightly sweet and tart and sweet yeast with a bit of sour apples in the aromas. Taste is zesty with a slightly tart yeasty and lemony taste then some peppery spices and a slight dry bitter from the rye - A very tasty organic wheat beer.
