The Englishman William H. Purvis introduced the Macadamia tree to the Hawaiian Islands from Australia in 1882. Today, there are over 20,000 acres of Macadamia plantation, all of it requiring honey bee pollination for nut production. Macadamia Nut honey is rich and dark, with a mild woody, nutty flavor that adds an undertone of complexity to the honey notes of this mead varietal. Brut dry and mousseaux, with a touch of breadiness contributed during the bottle fermentation, this varietal stands well on its own and makes an elegant toasting wine.
