At Good Word we still love a bitter, attenuated, well-hopped beer. With that we offer to you Vestigial Structues, bittered earnestly with Magnum early, and heaping proportions of centennial, Amarillo, (Michigan) chinook, and citra. The hops stand up to a hearty backbone of Weyermann Pilsner, Pale wheat, Munich, a touch of carafoam for a bit of mouthfeel, and crystal malt to marry the color to style, and light sweetness to interplay with the hops. The dry hop modest compared to today’s hazy standard. In the fv dry hops were just a tad north of 2.5lb per bbl. This beer is clean, dry, bitter, and thirst-quenching. We needn’t evolve away from all our past.

Pours clear topaz with a thick buttercream head. Aroma offers tangy resiny hops, zesty and slightly sweet citrus, tropical and malty hints. Flavor features piney and slightly bitter hops, juicy grapefruit and orange, subtle mango and fresh malt. Texture provides nice body and lively fizz. Take vestigial structures to the west coast.
