Back in the early days of craft brewing in the states, IPAs were pretty dang piney and resinous, thanks to the big, green Pacific Coast hops. To stay true, we used nothing but Centennial, providing a grapefruit and pine note to the cereal and caramel-driven grain bill. We also added maple syrup o the mix for a proper Canadian take. The syrup does not dominate but rather adds complexity and depth to the beer.
