D''oC birra rossa di segale. Stagionale, disponibile da fine agosto. Viene prodotta principalmente con ingredienti coltivati in Valle Varaita ( segale, orzo, grano, farro, kamut, peperoncino e luppolo ). Per questo tipo di birra, la luppololatura non avviene nel modo classico, ma secondo il metodo dry-hopping : il luppolo fresco viene aggiunto a " freddo " in fase di fermentazione; cosi non viene rilasciato alfa acido risultando cosi il prodotto finale meno amaro e molto più aromatico. La D''oC è prodotta in estate, e confezionata solo in bottiglia da 50 Cl.

it's a unfiltred orange-amber beer with a huge foam, a odor of sourish fruits, and fresh, in mouth we can find the fruits and a biterness in aftertaste, it's complexe and generous it's a beautiful ale.

500 ml capped bottle bought at the brewery. Poured an unfiltered slight gushing hazy copper-brown coloured Ale with a generous three fingers beige creamy head that had a very long retention and tons of micro bubbles. Soft carbonation. Some lacing. A lot of floating sediments. The aroma is sourish fruits, grainy apples, grapefruits, spicy, cinnamom and vanilla. The flavour is sweety malts, sourish fruits, apples and cooked caramelized apples , a deep grassy hoppy bitterness. The mouthfeel is sparkling and a bit thin. This light to medium bodied Ale has a lingering hoppy bitter and fruity finish. The aftertaste is quite amazing. A great refreshing Ale from a tiny brewery in the Italian Alpen of the South Piemont.
