Another currently emerging style is the "Brut" IPA. During fermentation we add an enzyme called "GlucoAmalayse", which breaks down the starches that yeast cannot on their own. This converts the starch to sugar, which the yeast then gobble up. This results is a very dry beer, with lots of effervescence. Low bitterness (to balance the extreme dryness), but plenty of hop flavor and aromas. This one's all about the hops (Hallertau Blanc, Mouteka, Galaxy and Nelson Sauvin).
