Matt's Sleepy Time Belgian Imperial Stout was the first release in Beau’s Wild Oats Series and is back by popular demand for a 2011 edition. Only 1,000 bottles of this delicious brew will be available for sale. Sleepy Time is an imperial stout (8% abv) that has been fermented with Belgian yeast and aged on oak staves. Tastes of chocolate, coffee & vanilla are complemented with American hops and a true Belgian character in the finish.

The description sounds great and is true to form. It's a very tasty beer but the Belgium yeast seems to be a little stronger than the other aromas and flavours. Dark chocolate comes in a close second. My partner bought this for her son Matt but he's asleep. Oops sorry.

The beer pours a solid brownish-black with a 1" light brown head that slowly dissipates. The aroma is coffee, roasted malt, yeast, and cocoa. The mouthfeel is medium to full bodied with above average carbonation. The flavour is roasted malt, dark chocolate, with hints of licorice and yeast. Delicious. -

Pours a large frothy brownish head and has a dark amber appearance. Thick patchy lacing. Aromas of chocolate, coffee, light roasted malts. Flavours of dark malts, chocolates, toffee, spices and caramel malts. Yeasty notes as well as a bit of nuttiness too. Full bodied mouthfeel. Great retetntion. Quite a yummy brew and at 8% abv, hides it well.

Last one from their "Best of Beau's 2012", but the first one in the Wild Oats Series. Pours a dark brown colour with red highlights. Big frothy mocha head with great retention and a little foamy lace remaining. Aromas of roasted malts, vanilla, alcohol, with hints of grassy hops and chocolate. Nice creamy mouthfeel with a mild warming and slight dry finish. Taste of bananas, spices, mild chocolate and burnt malts, with a hoppy finish. Not as chocolaty as it seems from the description, but a nice Impy Stout that has a bit more hop bite than most others. Real glad I could try this.

Pours black with small chocolatey-looking head. Aroma boasts coffee and coriander; unexpected. Medium bodied with strong carbonation and significant warming affect. Belgian yeast character dominates the flavor. Also roasty, light bitterness, subtly sweet aftertaste with licorice. Good enough to drink two...

on tap: Puts a dark brown-black ale in the glass, puffy tan cap, good kacing, soft carbonation. Aroma is musty-Cocoa-toasty, belgian yeast evident here. Flavor is lightly sweet but toasty-nutty with smoke undertones, not mucj hop balance, what there is is woody oak tones, long roasty chocolate finish. Interesting and tastey, no hint of the strength of this beer.
