In France, farmhouse breweries have crafted Biere de Miel for centuries – an ale brewed with an ample amount of local honey. Honeybees were long an emblem of French nobility and ultimately adorned Napoleon’s flag of exile. Miel Sauvage is Cajun French for wild honey and our Biere de Miel is fermented with honey from our neighbor, Bernard’s Apiaries and with barley imported from France. This sorrel colored beer has a pronounced honey aroma and is barrel aged to contribute a smooth vanilla darkness.

Pours clear chestnut with a rather thick and persistent buff head, more like a beer than a mead. Aroma is mainly raw honey plus hints of bourbon and wood. Flavor delights with honey, sour wood, and bourbon tones, plus just a hint of sorghum, for a distinctive mead that stands head and antennae above the others. Texture has OK body and not much fizz, and finish presents woody and honey notes. Bee wild, grab a bottle!
