Wassail is a traditional drink, served warm and mulled. Wassailing is the origin of Christmas caroling. (Google it.) Wassail used to be a stock ale or keeping ale, then mulled, and served in a punchbowl. I have always used a barleywine, but this year I’ll be using a strong ale that I fermented with a Belgian yeast strain. We’ll mull it and serve it warm.
