Aroma: 7 | Appearance: 8 | Mouthfeel: 7 | Flavor: 8 | Overall: 8 Damn this BJCP training...why am I so tempted to rate by style? Oh well, I'll just go with it. Spicy and fruity aromatics characteristic of the Ardennes/Chouffe yeast they chose to ferment this with, combined with plenty of caramel. Effervescent, but a bit sticky-sugary. Excellent use of yeast and malt flavors, rich and layered, not unlike Chimay Red or Westmalle Dubbel or Grimbergen or Maredsous 8, except that its underattenuated compared to these and on the sweet side, however, as a winter brew, I'm certainly open to that. Nicely done. |

Aroma: 9 | Appearance: 8 | Mouthfeel: 9 | Flavor: 9 | Overall: 9 Wow! I got nearly a pint for free at Cicero's because I got lucky again and got the last of the keg. Full, fruity aroma, spicy, caramelly and rich, very nice. Deep copper/red coloring with a very nice stand of eggshell foam which laced all the way down, despite the alcohol. Lively carbonation and coating, but not thick or slick, quenching and warmning, like a Belgian should be. Full of dark fruits, raisins, figs and some peach/apricot/pear notes with coriander, pepper and other spices, like anise. An excellent dark Belgian and a great find. Drink this if you can. |

Aroma: 6 | Appearance: 6 | Mouthfeel: 6 | Flavor: 6 | Overall: 6 Had this at Erato, a nice little wine bar with some good beer to be had. Served too cold, which I mentioned nicely, but I let it warm and poured in the rest of the bottle roughly into the goblet to toss up a nice head on it. Rather unremarkable aroma, even after it warmed. Some mild fruit and sugary alcohol. Tiny hints of spice in the flavor to back up the aroma. Not nearly as interesting as most other doubles/dubbles out there. Oh well. |

Poured deep brown with a huge fluffy head that hung around like a pillow for some time. Sweetly balanced, but not cloying with rich caramel and raisin flavors, touches of figs and others. Very nice. |

Aroma: 8 | Appearance: 8 | Mouthfeel: 6 | Flavor: 6 | Overall: 6 Opened with a comforting "POP!" and poured with a persistant, structured head over a ruby brown body. While spicy and mildly fruit throughout the bottle it was interrupted by its own dryness. For a Dubbel it sure did finish dry, and as such the spiciness lingered on and the bitterness played more of a role than I would prefer in a Dubbel. Still enjoyable, but not nearly as good as that oak aged Trippel I had from Allagash... |

Aroma: 8 | Appearance: 8 | Mouthfeel: 8 | Flavor: 9 | Overall: 8 I hope this qualifies a Dubbel and that the waiter was right. Anyway, it has incredible lacing with fantastic head retention and the best flavor I've yet experienced from an American crafted Trappist immitation. Complex with what appeared to be a tamed version of some wild yeast with flavors of clover, coriander, faint orange peel and raisens, what an immitation! RERATE: This beer has gotten better now that the last of it is being served. Fruity aroma, bitter-ish middle with sweet lingering finish, but not obnoxious. Early on it was a bit thin, but this beer definately balanced out. Very nice. |

Aroma: 9 | Appearance: 8 | Mouthfeel: 7 | Flavor: 8 | Overall: 8 Kind of an interesting, Americanized Belgian Double ale. The pour was gorgeous in my snifter, a deep yet clear brown with a towering, yet quickly fading, fluffy, white head. Yeasty (especially for a clear beer), malty and spicy in the nose. A strange mouthfeel that was kind of alien to me. When cold the malty aspect was overwhelming, but but mellowed as it warmed and balanced out, but seemed a bit too bitter/dry at the finish. It would be a good starter with an aged cheese or heavy dip. |

Another great Trappist offering, fruity, plumbs and bananas, some spice and hoppier nose and flavor as it warmed, an exercise in balance, for sure. Nice and dark to the last drop and a nice beige head that laced minimally. |

This was amazing, and it totally lived up the hype, nice caramel with some spice, citrus and other kinds of wonderfulness (is that a word?) I didn't expect in a belgain. Get this if you can. Acidic and pleasant across the tongue...can't wait to culture that yeast, baby. |

Aroma: 8 | Appearance: 8 | Mouthfeel: 8 | Flavor: 8 | Overall: 8 Banana and phenolicly spicy aroma, with some backing dark, dried fruits. Light brown brew with a very bubbly, big head. A full, but refreshing mouthfeel, however a bit much too carbonation, even for a quad. Fruity, caramelly flavors, signatures of the style, really. However, the hop bitterness was bit out of whack when I had this. Some time should serve this very well, and lots of time sure wouldn't hurt either...I'll evaluate again in a few years... |

While other beers are complicated, Three Philosophers is the epitome of complex. Cherry and sour notes of all kinds play behind the special B goodiness of chocolate covered figs and raisins with just touches of horsehair and bits of toffee totally masking the near ten percent alchol. A sheer masterpiece and nothing less. I would be honored to drink this beer again and again. |

Poured copper with a small eggshell foam cap which faded quickly. Malt, caramel, fruits, banana, spice and vanilla are all there but rather on the weak side. Nice, but lacking the character of most dark strongs, including the Chimay we had beforehand which overshadowed this one. Oh, and review number 700. |

Aroma: 10 | Appearance: 9 | Mouthfeel: 8 | Flavor: 9 | Overall: 9 Wow! What a treat! Shared a big corked bottle of this with some friends a few nights ago. Poured with a thick, fluffy head that stayed around longer than the beer, aroma of bananas, cloves, wheat, barley, very light spices. Simply splendid flavor, wheatier than the aroma, bready from ample yeast in suspension. A bit of citric tart in the mouthfeel would have been nice, but I won't nitpick. Just. Plain. Awesome. |

Very spice and fuller bodied for a trippel, more of a Golden Strong Ale, I would venture to guess...but certainly not the Duvel sense...or maybe a Belgian Specialy Beer...eh, whatever, its Belgian-esque and its pretty darn good, too. Very aromatic, floral and phenolic, like coriander and chamomille, as opposed to black pepper and centennials. Medium gold and a fair amount of foam for the carbonation level. Fuller mouthfeel than most Belgians, but a nice, medium bodied change of pace. |

Aroma: 7 | Appearance: 7 | Mouthfeel: 8 | Flavor: 10 | Overall: 9 So I pour this cellared beer from Canada. I get a hazy gold pour with a stand of off white foam, for a while. I smell pineapple, pepper, cloves, pilsner malt, sugary alcohol, other tropical fruits (coconut? mango? who cares...) a slight wisp of something spicy...hops? or yeast? The foam collapses in a jiffy and its full of haze, bold, I like it. The body and carbonation are there, the bottle condition paid off, even down the road, alcohol is warming in the slightest, but zero burn.. Incredible flavor, bananas foster (nuts, banana, caramel, vanilla, mild smoke), maltiness, tropical fruits again, estery and phenolic with clove and pepper. Spot on...complex but still rather clean. Impressive. |

This was a cleaner Belgian Golden Strong Ale, but still phenolic and mildly fruity. Clean and crisp malt flavors, mildly spicy hops and balancing bitterness. Well rounded and quite nice. |

Aroma: 9 | Appearance: 8 | Mouthfeel: 9 | Flavor: 9 | Overall: 9 What an excellent brew from Belgium, yet again. Pours a great amber color with lots of white fluffy head in the snifter. Just enough haze to really make the beer glow. In those nose is light caramel, floral, citrus, banana, a hint of spice, etc., etc... Slightly sticky in the mouth and swallow, but smooth as can be. Generous caramel in the mouth, floral hops that don't overpower, some maple syrup quality, and all kinds of tasty. This is a champion which really excells in the aftertaste, as everthing comes together. |
