When is a wild ale not a wild ale?
General Beer Discussion by SLOWRUNNER77
I know it can be hard to classify beers these days, with a the blurring of, or ignoring of style guidelines, but there seems to be a few definites. For the most part, anything with wild yeast/bacteria is considered a wild ale. Unless it started as a saison. So my question is when does a saison become a wild ale, and is it a different standard than other beers? Several of the top saisons are made with brettanomyces and some are bretted and aged in barrels. those beers, had they started as any other style but saison, would be wild ales (Interlude, Saison Brett, Sofie, Funky Galaxy, Love Buzz...). Sain't devotion is a great example of a Belgian Ale (Devotion) that was treated with brett...it didn't stop being Belgian...but is classed as wild. Lolita is classed as wild because it's a bretted BA beer, otherwise it could be a Belgian Ale or Fruit Beer. I put this in this forum to discuss because I don't think it's a beerpal issue, just more of an inconsistency across all the sites...

[:0] Here's a good beer pairing, but consume with caution! http://www.shopwell.com/la-costena-jalapeno-peppers-green-pickled/pickles-relish-olives/p/7639700128 This is a genuine Mexican product...NOT prepared with the average North American consumer in mind. It's VERY brined and VERY HOT. They call 1.7 oz "a serving", to keep the nutrition label from scaring everybody away. [:D] I use a couple peppers and a couple tablespoons of juice in 30 oz of chili. That's plenty. I should know, I used to eat Habaneros. [:0][:p][8)] The deal @ Wally was $0.50 for two 26 oz cans. Tells me that it wasn't flying off the shelves, for obvious reasons. [;)]

With the heavy Mexican influence on California, we are lucky to enjoy several authentic dishes that I couldn't live without. Mangonadas, jicama w/ lime and salt, mangos with chili powder/salt/lime, grilled corn on the cob with chipotle mayo and lime, fresh trout tacos, Sardines Vera Cruz, fresh margaritas, not to mention all the fresh fruit and veggies grown in Cali.
[^][:)][8D] VERY NICE WEATHER REPORT, ESPECIALLY FOR HERE IN CNY! WE HAD A "GREEN" XMAS, AND IT'S 42F AT THIS MOMENT. WHO'S GONNA COMPLAIN ?!? [:D]

Cold caps to follow. [:0][:)][8D] We are enjoying a 46F pre-sunrise morning here in CNY. Street light in my front yard shows most of the sn_w is melted. What a great start to February !!!
That's just what we tell to the rest of the country. True enough we had only about 1/16"snow at my place this winter, but there is one hell of a lot of mildew and green slime to be washed away.
