Moules, frites, half a waffle, and two beers at Cock & Bowl: Arabier by Brouwerij De Dolle Brouwers. I love De Dolle Stout and selected their blonde to accompany my moules. Starts dry and lemon-rind bitter when cold. Becomes much smoother with a few degrees. Podge Belgian Imperial Stout by Picobrouwerij Alvinne. Extremely foamy! Our waiter, who knew what to expect, brought two chalices for the 12 oz bottle. As soon as he pulled off the cap he instantly poured one chalice full of rapidly expanding and highly pressurized foam. Then he poured the second chalice half-full and set it aside. He then returned to the first chalice and poured the remaining liquid through the slowly settling foam. The beer itself was a very cloudy brown color and the chocolate and roasted flavors and aromas were subdued by a spicy hoppiness. Great with the chocolate and caramel waffle dessert. Happy Belgian National Day!

I could go up to begium wisconsin and get some belgian tripe (sausage with tripe and sauerkrat) and the belgians seem to follow the medieval philosophy of making sausage..."Sausages are where the butcher hides his mistakes."
