with bbq pork i would choose a saison or a pale ale. Right now my gut goes with Lake Superior Special Ale, Dig Pale Ale or Black Husky Pale Ale. Of the three right now I'd choose the Lake Superior, cause it leans towards the saison. Also because its in my hand, unlike what looks like a great smoked pork. you can keep the baloney.

Saison is good because I've found that it pairs well with anything. It may the Universal Pairing Beer!

I posted in your blog, that...at least in my opinion...it's not about pairing the beer with the meat, but rather the sauce that's used since smoked pork (be it butt, shoulder, or chops) tastes pretty similar. Sweet sauce needs to be off-set with something twangy/acidic and vice versa (or at least something with a really clean finish). Hops and smoke don't get along really well for me. I'm probably in the minority, minority but I've never found smoked beers to be a good pairing with smoked meats. The smokey details of the beer gets lost in the smoked meats, which (when done right) just obliterates any smokey beer (including my favorite Aecht Schlenkerla).

Honestly didn't use much sauce because it didn't need any. The apple and hickory woods plus the extreme tenderness of the pork made it unnecessary to add sauce. A dipping sauce might have been the way to go on this batch but most everyone ate the pulled pork on buns. It would have been fantastic chopped and with a sweet vinegar Carolina-type liquid sauce on or in it. Since it was my first Boston butt, I went the safe route. I still love Rauchbiers with any smoked meat. Maybe it's a "double entendre" but I really believe Smoked beers are perfectly paired with smoked meats: Heavenly Smoke! Would be even better with some kind of grilled plantains or peaches. Smoke all around for everyone. Smoke' em if you got 'em!

IMO, this really is the only way to enjoy pulled pork (of course, no sauce too is damn tasty). I love my pig-pickin' saue with extra chili pepper flakes. I'm droolin'.
