On his return to Ireland in 1997 he took up a job as a brewing assistant in Dwan's brewery in Thurles under English brew master David Jones. By 1999 Cuilan was running the Dwan's Brewery as David Jones has moved onto a brewery in Sweden. In 2001 Cuilan and his wife Sally set up the Shelta Beer Ltd and obtained a lease from Bill Dwan for the brewery in Thurles. Over the next 3 years they ran a very successful export business and won many awards for their beers. In 2004 the Dwan business was sold and Cuilan moved to Messr's Maguire's in Dublin city centre where he ran the brewing operation until 2009. An opportunity then arose to purchase the Kinsale brewery which has ceased operating. A suitable premise's was located in Templemore. The brewing equipement ( from 1996, Caspary Schultz ) was purchased and the arduous task of moving a brewery and re-commissioning it was undertaken. Finally after 6 months the brewery was ready to go and duly open in August 2009. Cuilan's ambition has always been to brew a beer which would be widely available in the local area. Since the demise of Perry's in Rathdowney in 1966 there has been no local ale available throughout North Tipperary. With this in mind the White Gypsy Brewery are now launching " Ruby " Irish red Ale with the focus very much on brewing a good flavoursome beer.
