Links: Sign Up to Participate:The Texas BIG BEER Brewery is a small brewery located in Southeast Texas out in the woods just South of the Big Thicket. Owned and operated by John & Tammy McKissack, our goal is to start up a small debt free brewery with no pressure to brew more beer, just to make more money to pay to some bank! Brewing great beer is a craft, which should be appreciated, enjoyed and savored. We believe that if we live a simple life, make wise decisions, put in an honest days work and brew the best craft beer we can, the bottom line should take care of itself. We hope you will visit our brewery when we are up and running, so we can let you sample our beer and tell us what you think. And depending on how busy we are at the time, maybe we can kick back and chew the fat and shoot the breeze. If we are busy, we may put you to work brewing great craft beer and sample the finished product. We prefer BIG high alcohol beers that are rich, malty and flavorful, so that is the kind of beer we will be brewing. We have had several brewers say that we may regret the decision to brew such big beers, because we will have to use twice as much malted barley to produce the same amount of beer as your average craft brewery. We too are concerned at the higher cost to produce our beer, but like we said, brewing great beer is a craft and should be appreciated, enjoyed and savored and it just cost more to do that. We enjoy a lot of different great craft beers and we are bound and determined to add our beers to that list of great craft beers we enjoy drinking. We do have plans in the future to brew lower alcohol beers, but they will not be our regular beers. While some craft breweries come out with seasonal and limited edition brews that are big and extreme, we will do that with beers that are average. Our brewery is unbelievably small. It is in a small building on the front of what will be our little five acre Self-Sufficient Homestead. As we build the brewery we will be building our homestead at the same time and we plan to make our brewery an integral part of the functionality of our homestead. The brewery waste (spent grains) will feed our livestock including our chickens, ducks, geese, a few pigs and maybe a cow or two. We even have plans to make the spent grains into catfish food for the fish in our pond (we still have to figure that one out.) There has been concern in recent years about CO2 emissions, so we are looking into venting the CO2 produced during fermentation into our greenhouse so the plants can convert the CO2 into oxygen. The added CO2 will increase plant growth and reduce the amount of CO2 being released into the atmosphere. Our goal is to convert our waste into food. Next we need to figure out a way to capture the heat produced when chilling the wort and convert it into energy, or something.
