Introducing SHEEPS CROSSING, a 10% Dopplebock... Back in July we decided that it would be quite nice to have a high abv barrel/oak forward doppelbock style lager to drink in the fall. So we brewed up this sticky dark German lager in the hot phx summer. We used a base of barke Munich, barke pils, and a touch of Carafa II (a smooth de-husked roast malt). Hopped lightly and solely with Saaz. Fermented in a variety of whiskey and mead barrels with a neutral Swiss lager strain, then cold aged/lagered in the barrels & on the lees for 4 months. Very smooth dark lager with moderate booziness and a creamy/soft finish. Really nice caramel, brown sugar, toffee stuff going on. Slightly fruity, like roasted plum. A nice warming oak forward lager for fall/winter.

Rated Dec. 2020. Pint can pours with a dark mahogany colored body that supports a thin tan head of foam. The aroma offers up brown sugar dredged dates and plums as well as a hit of spicy oak and a mild sense of booze. The taste delivers smooth rich sweet spicy earthy date notes leading to plums crushed over a pool of molasses. It becomes more brown sugar and booze into the finish with a modest sense of spicy oak. This is nice.
