Cider made from mixed varieties of cider apples: bitter, tart, sweet, bittersweet etc, according to traditional methods. Fermented in temperature-controlled wooden casks till January and February when it is repeatedly decanted between casks. Colour: clear, transparent, bright yellow. A complex bouquet with hints of ripened apple; good presence in the glass. Fizzy and bubbly.

Shared bottle at RBNAG 2011. Still cider. Pale straw colour. Strong and nice aroma of cider apples, oak and sulphites. Medium dry flavour, same elements as the aroma.
