The beer Trappistes Rochefort 6 starts from a density of 16,50° Plato to have a volume of alcohol of 7,5%. Its fine flavour makes it delicate to the palate! Oldest, brewed in a very empirical way until after the Second World war. Before 1958, conditioned only in 1/3 and 3/4 L bottles. Strong malt flavour, slightly bitter.

I tried this beer on May 14, 2009 at "Smokeless Joe's" in Toronto, Ontario, Canada. The beer poured a nice reddish-brown with a thin white head that lingered. The aroma was sweet roasted malt, yeast, caramel and brown sugar. The mouthful was medium to full bodied with medium high carbonation. The flavour was slightly sweet, yeasty, malty, toffee with plums and spice. A very good beer.

    Rating from Aug. 2006. Started to pour out copper then the sludge made it to the glass. Now it’s a cloudy amber color with no head. Aroma is the classic Belgium yeasty fruitiness and some solid malts. I’m probably drinking it a little above 60F. Mmmm. Really nice flavor. The cherries are competing with the complex malty back bone for flavor supremacy. The malts seem to consist of the dryer grainy variety (maybe Vienna) and the more roasted caramel. Creates an excellent balance. I can’t detect any hops. Smooth fruity and malty after taste. First class brew. Not a flavor out of place. I look forward to the 8 and the 10.

    C: Deep Mahogany, ruby highlights, long lasting generous head
    A: Dark fruit, chocolate. Roasted malt
    P: Medium to Full Bodied
    F: Nicely balanced, fruit notes are balanced by the bitter hops, yeast more noticeable in the 6 than the others
    O: All three Rochefort beers are pretty much identical (they start out as the same virgin batch) but the length of time they leave the batch in the vat really allows the beer to improve leaving the 10 a much better beer than the 6

    330ml bottle from LCBO. Careful when popping the cap, lots of suds came pouring out and had to pour quickly. As a result, pours an insane amount of a beige foaming head and has a light murky coppery amber appearance. Excessive carbonation. Some decent dirty lacing. Some sediment visible at bottom of glass. Aromas of toasted and caramel malt, some earthy and resiny notes as well as yeasty hints. Flavours are similar to aroma in that the toasted and caramel malts are at the forefront but followed up the yeast and earthy hops as well as some mild spice hints. Full bodied, great retention. Fizzy mouthfeel. The easiest going of the Rocheforts but also the least interesting.

    Pours clear, bubbly cherrywood with a thick, though not long-lasting, eggshell head. Aroma yields sweet apple, malty, earthy and subtle herbal tones. Flavor bursts with earthy, sweet apple, lightly toasted malt and herbal notes - is that a hint of tea? I love tea! - for a distinctive and very tasty Belgian. Mouthfeel presents firm, smooth body and lively fizz. Those Trappists live well - and drink well.

    Rusty light brown, hazy with a light tan 1" head. Dusty grass, sweet lemon, and bread aromas. Flavor is sweet bread and rummy raisin giving way to earthy yeast and a drier, light and grassy finish: I love that there are several moments in each sip. Doesn't have the heavy spice flavors I associate with many dubbels, making it more versatile. Very lively soft and fizzy carbonation, not sharp and leaving no lacing, medium to light body for the style. Really impressive!

    Finally had the opportunity to try the two Rocheforts that I had missed previously and I have to be honest, I didn't see a whole lot of difference between the three of them. Lots of bread and dark fruits mixed with yeast. They don't try to hard to deviate from the formula. Maybe the thinnest of the three, but still an excellent beer.

    Pours a nice cloudy dark amber with a massive fizzy head that takes its sweet ass time. Aroma is very pleasant with hints of fruits with the general hoppyness. Floral hints to this one as well. This beer is heavily carbonated not unlike a light beer found here in the states. Taste somewhat suprises me, it is very light. I find the taste a tad lax for a dubbel but it is very pleasnt to drink. Hints of floral and is a tad fizzy to the touch. A little sediment at the bottom of the glass. Overall a pleasnt beer to drink but I thought it would have been better.

    Pours a dark copper/red colour. Large bubbly off-white head, dissipates quickly. Aroma of dark fruits with a hint of banana. Sweet malty flavour , raisins, apple and banana. Lighter body than I expected. Quite dry. Tasty. Unexpected perfumy taste towards the end.

    A really great dubbel, looks good, smells good, tastes good. A yeastier aroma than expected but bready and full. Nice cloudy ruby color. Sweet, but not too sweet, complex and well balanced with the mouthfeel of 10. Corsendonk had been my favorite but this one is better.
