Fall is definitely here, and over the weekend, I put in what will soon be our first fall seasonal..."LA PUMPKIN ROYALE". This tasty treat is based on a Belgian-style Saison, with a twist.....wood-fire roasted pumpkins. We sourced the pumpkins from our favorite local organic grower, Blaine Tornow at Moonshadow farms. They were then roasted in our wood-fired oven oven, and added to the mash tun with our grains, extracting both flavor and color. We finished off the beer with an addition of pumpkin pie spice at kettle off, so as not to lose too much of the aroma from the spices. We then pitched a yeast from Belgium's Brasserie Dupont, a well known producer of the style. Retaining the spice aromatics could prove to be a formidable task, as Saisons are fermented at incredibly high temperatures in comparison to our most beers, often approaching 90 degrees! This makes for a violent fermentation, with lots of Co2...or scrubbing "bubbles". This beer will be a hazy orange in color, with unique yeast-generated aromas combining with pumpkin and spice, for unique beer that will only come once a year. Alcohol I expect to come in somewhere in the 6% range.
