YEAST: Ardennes HOPS: Centennial, Tattnang MALT: 2-Row, Rolled Oats, Wheat, Pale Wheat The Ardennes yeast steals the show yet again in this German Witbier. When fermented at a lower temperature the Ardennes yeast predominantly produces cloves, with just a hint of esters. When fermented at a higher temperature, as we did with this witbier, it produces a tremendous amount of estery goodness that will make you feel like you’re right in southern Germany or northern Belgium. Sir Sandford Fleming was a Scottish-Canadian inventor and engineer who is best known for his invention of our current standard time zones. A lesser known fact is that he actually made a visit to Newfoundland in 1868 for a very different project: the Newfoundland railroad. Fleming sponsored a preliminary railway survey which kick-started the process of bringing railway travel to the island. As engineers themselves, the owners of Ninepenny are proud of the work their trade has done in this province and it’s an honour for the brewery to be situated mere feet from a section of that surveyed land where trains eventually rolled.
