For centuries monks throughout Europe have been recognized for crafting some of the world’s finest beer. The Benedictine monks of New Mexico bring these same venerable traditions to Monks’ Wit ~ a light refreshing Belgian-style wheat ale brewed with spices that endears you to its heavenly taste. Monks’ Wit is a Belgian-style wheat ale. It is 5.1% alcohol by volume, 14 IBU, and has a starting gravity of 1048 or 12° Plato. It is made with a blend of barley and wheat malts, as well as unmalted wheat and oats. We use only the finest European hops, including Czech Saaz and Styrian Goldings from Slovenia. Our yeast was originally from the brewery of the Belgian Trappist Abbaye de Notre-Dame d’Orval. Monks’ Wit is distinctly fruity and spicy. The yeast lends a note of spice that accentuates the coriander, orange peel, and other spices. The malt itself provides a sweet, bready quality up front, a round fruitiness in the middle, and the hops and spices together with our pure brewing water, lend a clean, dry finish. This ale makes an excellent aperitif or salad accompaniment, and pairs well with seafood, especially shellfish. It is a wonderful companion to light herbed cheese or chèvre. Nice surprise out of New Mexico, Aromas of Hay, orange peel, and spices- fruity and a touch floral. Mouthfeel is average with a sharp carbonation bite, the body is a pale yellow with a touch of haze, a thin soapy head. Flavor is orange, and the yeast gives it a nice fruitiness, the biscut malts give a nice balance. Overall a pretty nice brew.
