The matchbook is a dark complex ale. Smoke and heavy malt character are the main characters in this show. Just five pounds of smoked malt is added to the total of 400 pounds of grain. Although it sounds like a very little amount, smoked malt is an extremely brooding malt, taking over the flavor profile if over used.
