Brassée avec un mélange de levure belge, levure sauvage et bactéries acidifiants, la bière a commencé sa vie comme un assemblage de bière maturée en fûts de chêne pendant un à deux ans. L’assemblage a ensuite refermenté sur un volume égal de pommes bio Golden Russet fraîchement broyées et leur jus, provenant de nos ami.e.s du Le Verger de Hudson Bio. L'hybride bière-cidre a ensuite passé dix mois en fûts de chêne pour augmenter sa complexité et sa sécheresse, avant d'être refermentée en bouteille pour un mois.

Lightly hazed, bright, light golden-yellow with a fizzy white cap, and not much stay, nor lace. Apple vinegar nose with sourness, Brett funkiness and woodiness. The taste shows the funk, sour notes, apples and big yeast-tartiness left on the tongue. A nice hybrid of apple cider and Brett beer.
