This very special dark ale has been brewed in small batches and then matured in hand-selected, first-fill bourbon casks to give it its rich, rounded character. Notes of brown sugar, orange oil and coconut are complemented by an earthy freshness from the hops, and the 30 days the beer’s spent in oak have ensured a satisfyingly smooth finish. We spend a lot of time at Innis & Gunn finding the perfect casks to home the new beers that we make. So many factors can influence the reaction between the wood and the beer, that we like to give the casks the best possible chance of success, by considering things like their age, their previous occupants, their finish, their char level... We’ve selected relatively new bourbon casks for this recipe in order to complement the rich, heady flavours of the beer with a light touch of vanilla and spice from the wood. The casks have also helped to smooth the finish of the beer, making it velvety and very long.

Pours an average size frothy bubbly beige head and has a clean dark amber appearance. Some dirty lacing. Aromas of bourbon are somewhat noticeable at first but much more light roasted malts take over. A hint of caramel as well as faint spices. Flavours are malty from the start but the aged bourbon notes do take hold almost immediately afterwards. Some sweet malts as well as the caramel are apparent also. Fairly smooth and slightly oily mouthfeel. Above average abv but barely noticeable. Goes down real well.

330ml bottle from BCLDB Nordel Crossing. Best before June 2016, and the label says "carefully matured"(!). Dark and clear ruby pour, with a temporary brown head. Nose is not bad, with the usual I&G malt-forward approach, plus a hint of the bourbon. Taste is quite decent, with malt, bourbon, and some dark fruit. Just sweet enough, and just sweet enough at the finish as well. Mouthfeel is okay. Bourbon notes through and through; I'd have this one again (but I probably won't).

Part of their Holiday Pack for this year. Pours a darker brown, copper colour with deep amber highlights. Light-beige creamy head, decent retention and some nice full lacing. Aromas of roasted malts, smokiness, dark fruits, some hops and hints of nuttiness. The bourbon is a little more present in the taste giving some coconut notes and lots of sweetness in the finish. Flavours of rich dark fruits and caramel malts. Some good hoppiness as well. Pretty nice dark ale, but a little too sweet to have more.
