Silva Stout took a lot of patience. We aged our Double Stout in oak bourbon barrels for seventeen months. Flavors are very complex. It starts off with dark chocolate truffles rolled in cocoa powder. Next is the vanilla and wood notes, with rich cherry-like fruitiness. After racking and filtering the ale, we blended in just the right amount of freshly brewed Double Stout to provide the perfect balance of bourbon barrel aging and freshness. Enjoy the culmination of years of flavor development now – no further aging required!

Had as Cellar 3. Pours coffee brown with a thick, frothy, and rather persistent tan head. Aroma has yeasty, earthy, bourbon, cocoa, coffee, woody and vanilla notes. Roast malt, cocoa, yeast, wood, bourbon, cherry, vanilla, and a bit of molasses pop up on the flavor stage. Texture has good body and fizz, leaving a variegated finish. Get the Cellar 3 version, you won’t be sorry!

Another impressive Green Flash beer; this one from August KnoxBeerCrew tasting event. Black-brown pour, nice tan head, good lacing. Near-burnt/roasted malt aroma, woodsy - oak, whiskey, some coffee and bittersweet cocoa, touch of vanilla. Flavor mimics the aroma with a deep roasted woodsy oak bourbon and cocoa goodness in my mouth. Most excellent offering.

A great beer from GF... Probably my favorite they put out. Already love the double stout, and the barrel treatment is not overdone and does nothing but imprOve on and smooth out the beer.

Pours a dark black/brown, very good head and lacing from stubby 12ozer .. . light oak, burnt wood mostly- very refined and subtle .. . this is dangerous stuff, very drinkable .. . Beth it's really important you make out with me now!
