Speciation: The process by which something new and distinct is created. Since they opened back in 2020, @thirdmoonbeer have been pushing the Ontario craft beer scene forward in a huge way, and inspiring others - like us - to try and do the same. They’re leaders in the industry and generous in how they share their knowledge and experience. And so we were excited to host Bebo and Chris from Third Moon back in December to help us brew something special. We knew it had to be bold. Enter Speciation Imperial Stout with Dulce de Leche, Cacao, Coconut, Vanilla, Banana, and Lactose. At 11.9% it’s the biggest beer we’ve ever produced. Yet, it’s remarkably smooth, carefully crafted, complex, and well balanced - with a ridiculously glorious mouthfeel. This sh*t really is bananas.

Pours a dark brown with ruby highlights, a beige frothy head, decent stay and some creamy, web-shape lacing. Prune aromas with the roasted malt. Eventually the caramel, lactose comes out to show the Dulce de Leche, with the bananas and alcohol to blend things. Still, mostly dark fruits in the taste with the warming alcohol. The dessert part is just a touch in the background. Not too syrupy mouthfeel, more slick, oily with enough hops to cut the sweetness and dry out the finish a bit. A good Imperial stout with hints of other things that are usually too sweet.
