Like origami, Bonsai is an ancient tradition of Japan that promotes careful contemplation. We view our small craft brewery the same way, aimed at careful cultivation of craft beer flavor and culture. Pours hazy, barely translucent apricot with a thin eggshell head. Aroma features a strong kumquat note and fresh malt. Zing kumquat dominates the flavor while letting fresh malt and a bit of hops peep through. Mouthfeel has faint body but good fizz. Go kumquats!
