Cette bière était autrefois produite à l'Abbaye cistercienne de Paix-Dieu, où le calendrier lunaire jouait une rôle central. Afin de faire perdurer la tradition brassicole et conserver l'âme de l'abbaye, cette dernière a confié le brassage de la Paix Dieu à la Brasserie Caulier, ( en savoir plus ? www.paixdieu.be ) imposant la rigueur de ne brasser qu'une seule fois par mois, par pleine lune. Le résultat ? Une Triple de 10 %. Onctueuse et pleine de caractère; une bière artisanale dans la plus pure tradition des bières belges d'abbaye, la Paix Dieu est ainsi préservée de toute filtation ou pasteurisation. 330 ml swing-top bottle, June 2014 edition. Poured in the original and " prestige " Paix Dieu stemmed glass an unfiltered and hazy pale-golden-orange coloured A T with a one finger slightly beige fine and soapy foamy head that had a very long retention and tons of micro bubbles. Low carbonation. Some lacing. Many floating sediments. The aroma is powerful malty, fruity, oranges, apples and a very easily detected alcoholic feeling. The flavour is yeasty, sweety toasted malts, candy sugar, fruity, apples, pears, apricots, honey notes and peppery hops. The mouthfeel is light crispy, sugary and a bit sticky. The texture is watery. This full bodied A T has a long fruity and alcoholish finish and the expected warming effect. An amazing design with a glass of exception but the contents, not bad at all, don't reach the level of the packaging.
