Recipe 1 of Kolsch was great, but we felt that it was missing something. This time Carapils Malt was substituted for Munich Malt for added character and the original gravity was reduced slightly to make is more sessionable. Recipe 1 was filtered but we sensed that it took away some of the fresh yeast character, so Recipe 2 has been left unfiltered and the results speak for themselves Pours clean creating a brilliant golden beer that is purposely hazy. Wheat has helped the foam cap which is near pure white and sturdy. Kolsch’s aromas are bright and cheery showing off fresh bread and biscuity aromas, with lemon zest, apple and a hint of pepper. Leaving Kolsch unfiltered allows the yeast to play its roll fully helping the flavour reflect the aromas creating a clean beer with a light to medium body and fresh quick finish.     I went all the way to Toronto to try several of the new Beer Academy beers, the kolsch was one of them. Like most koslches, this is a refreshing lagered ale. Plenty of grains and yeast in the aroma and some sweet fruit hints. Flavour is similar, and has a dry wine like finish. An interesting take on the style.

    Beer pours a solid reddish-gold colour with a thin tan ring for a head which lasts. Aroma is pine, grapefruit, and caramel. Mouthfeel is medium to full bodied, with medium carbonation. The flavour is caramel and grapefruit, with some metallic notes in the mix. Overall, very drinkable.
