The first few brews were done on Buffys plant. Roger is a purist and when I presented him with my three original recipes, Premier as the standard bitter, Captain Bill as the strong bitter and Bees Knees using honey and coriander, he shook his head and declared "Water, Malt, Hops and Yeast, that's what goes into beer"... Suffice it to say that in all the time I have been brewing, this has been my best selling beer both in bottle and cask. Apart from an honourable mention at the Cambridge 1999 winter beer festival, this beer has never won an award but remains a firm favourite. With Maris Otter pale malt supplemented by just a little bit of crystal in the grist, the hops are Challenger, Ahtanhum and finishing off with Fuggles at the end of the boil. The Honey is added for a quick boil and then coriander seeds used to strain the wort through the hop back. One of the strangest compliments I have ever received was from a lady Morris dancer who declared "I didn't realise beer was supposed to taste like this". The label was designed by Martin Bennet, simplicity itself... bees legs against a honey background and the name, initially just Bees Knees, but as there are now a few beers called Bees Knees I added the definite article 'The Bees Knees'... accept no substitute.
