This 2021 release in our annual holiday series of extra-festive barrel-aged Imperial Stouts, Hibernator, was aged for over a year in Maple Bourbon barrels. Pouring a syrupy jet black, this strong beer kicks off right off the bat with sweet notes of maple syrup, sweet & sour blueberries, and finishes with warming wood and spice flavours from the cinnamon addition. A pinch of sea salt rounds out all the flavours.

    750ml bottle from the brewery pouring a dark brown colour with hardly any highlights. The mocha-coloured head stays long enough to excite and leave a thick creamy coat around the brew. Oh my! The smell starts off nicely with the blend of things in here. A light blueberry fruitiness over the roasted malts with coffee, coconut and spices. The mouthfeel shows the warming heat of the chipotle. A roasted barley base with such a nice mix of flavours that expecting rich, sweetness, but with the heat, saltiness lingering, then blueberry hints. Still getting some coconut, even though not showing in here. Just a really good warming Impy Stout on this really cold night. Just what I needed.
