This 2021 release in our annual holiday series of extra-festive barrel-aged Imperial Stouts, Hibernator, was aged for over a year in Bourbon barrels. Pouring a syrupy jet black, this strong beer kicks off with sweet notes of creamy vanilla and tangy cherries, which lead to a warming finish featuring citrus notes and delicate ginger spice.

A very dark brown colour with hardly any highlights. Getting some maple syrup nose, but none of that in this one. After breathing, still picking up sweetness, but from the vanilla. Hints of orange peel and very mild cherries. Not getting much of the ginger, nor in the flavours. The finish has decent bitterness and dryness. Roasted malt base and thankfully, not as sweet in the mouth. Rich, but not overpowering. Wish I was tasting more of the fruits, and ginger, but still pretty good as an Imperial Stout.
