Brewed with pale, caramel, roasted and chocolate malts, this Mother Shucker is hopped up with Willamette and balanced out with the sweet and full flavor of oats. Fresh Louisiana oysters are added to the brew in the final stages, infusing a slight taste of sea salt that offsets the sharpness of the stout.

Pours translucent cola brown with a thick, though not long-lasting, light tan head. Aroma presents typical stout notes of roast malt, molasses and semi-sweet chocolate. Flavor is more exciting, molasses and roast malt plus mocha and - yes - more than a hint of oyster. Finish features a hint of bitter fresh wood. Mouthfeel is average, but enjoyable. Not half bad.
