We thought it would be cool to try and invert out own sugar In House to have our very own custom made Belgian candy sugar (something I have yet to hear of any other Brewery do :) so we DID! The sugar itself adds amazing notes of plum, fig and raisin post conversion , while the elderberry aroma and flavor pair seamlessly with the tart sourness of the beer itself.
