Havarti is magical with beer, I also like a good Smoked Swiss. Honorable mentions go to: Smoked Cheddar, Aged Swiss, Extra Sharp Cheddar, Pepper Jack. Lots of Amish and other small local cheese houses around this area so well crafted regional cheese is easy to come across and fairly cheap. I can feel myself getting a bit backed up just typing this....

I found one cheese of the month club that sells the Chimay cheese. I know it's boring and mundane, but I absolutely love swiss cheese.
