We are so thrilled to share the next batch of our Czech style Pilsner, Mustek 11. This “11” represents 11 degrees Plato, the starting density of the wort after the brew process and before fermentation begins. Mashed with a blend of bohemian Pilsner malt and weyermann premium extra pale Pilsner malt. Step mashed with care and attention to various rest temps to ensure the perfect blend of attenuation, mouthfeel, and flavor complexity. Natural sour wort utilized for mash pH control. Blended in a small amount of our natural Prescott water source for light minerality. Hopped lightly both early & late in the boil with our premium select Czech Saaz hops. Fermented cold with our house lager yeast to 4.8%, then lagered for 6 weeks. 100% natural carbonation. This is one of those special lagers with an impossibly long finish. Bright and bready aroma with a subtle dank wildflower character.
